Q: Can you please provide a brief statement about the importance of food allergen safety at your restaurant?
With millions of people suffering from food sensitivities and allergies, it is very much a part of our training and operations. The importance of allergen safety cannot be overstated. For some of our guests, the allergies are life-threatening. For others, the allergens cause discomfort. For Food Fight, they are equally important. The severity of the reaction to an allergen is immaterial insofar as both food sensitivities and allergies need to be treated with great importance. The more a guest communicates with us, the better we are able to communicate internally to ensure their safety and comfort.
Q: Do you have any procedures for those with food allergies?
Steps guests can take to notify a restaurant that they have dietary restrictions or food allergies.
If a guest makes a reservation online or by phone, please note the allergy or restriction information with the reservation. Upon arrival, the guest should mention the allergy/restriction to the server before placing their order.
If no reservation is made or the restaurant does not take reservations, the guest should mention the allergy/restriction to the server before placing their order.
These are steps our restaurants take to accommodate dietary restrictions and control allergens:
Servers will note the allergy or dietary restriction when placing the order, so the kitchen staff can see it right away.
Restaurants will use clean utensils and cookware to prepare the guest's dish, in an attempt to minimize cross-contamination.
Some restaurants are naturally free of certain allergens based on their menu (i.e., Tex Tubb's is peanut-free, Miko Poke is dairy-free, etc.)
Q: According to the FDA the Top 8 food allergies are: Dairy, Eggs, Fish, Crustacean shellfish, Tree nuts, Peanuts, Wheat and Soybeans. Do you use these ingredients in your restaurant and is it safe for someone with this allergy to eat at your restaurant?
Yes, we use all of those ingredients in many of our restaurants. Our kitchens do not provide an allergen-free environment, so it is crucial that guests notify their servers of any allergies. Please be aware that during normal kitchen operations involving shared cooking and preparation areas (including common fryer oil), the possibility exists for food items to come in contact with other food products (cross-contamination).
The menus in our locations change frequently. Depending on the seasonal offerings, allergens such as dairy, eggs, fish, shellfish, tree nuts, peanuts, wheat and soybeans, may be present in our kitchens. We strongly recommend reaching out to specific locations with food allergen questions and concerns.
Q: In addition to food allergies, we will provide recommendations for restaurants that have food for other dietary restrictions. Please comment below if you have options for the following dietary restrictions.
All of our restaurants are able to modify certain items to accommodate dietary restrictions and food allergies. Many of our restaurants denote items on menus that fit within certain parameters, and a few locations have dedicated menus. These items can be viewed on each restaurant’s menu page online.
a. Gluten Free options:
Our restaurants all use products containing gluten. For a guest with a gluten allergy or sensitivity, we have procedures to minimize the risk of cross-contamination. Since that possibility still exists, we do not mark any items on our menus as gluten-free, but rather gluten-sensitive. Some of our restaurants offer gluten-sensitive menus to specify to the guests which items are able to be modified to reduce the risk of contact with gluten.
b. Keto options:
Although Keto is not a designation we use on our menus, we are always happy to prepare dishes that are lower in carbohydrates to accommodate a Keto diet. Our serving staff is not expected to know how items can be modified to be Keto-friendly, so we ask that guests inquire about possible modifications.
c. Vegetarian and Vegan options:
All of our restaurants offer vegetarian and vegan options. Menu items that can be prepared to suit a vegetarian or vegan lifestyle are marked with a VG or V. The guest should clarify that a dish is vegetarian or vegan when ordering. In some cases, a dish can be modified to be vegetarian or vegan depending upon the protein used in the dish (i.e., substituting a black bean burger or portobello mushroom for a beef patty on a hamburger).
